The Chistorra sausage is a traditional recipe from Aragon, Basque Country, Rioja and Navarre in Spain.
It is made of minced pork and flavoured with garlic, salt and paprika, giving it its characteristic bright-red colour.
It can be used as an ingredient of many delicious dishes; from a simple pan sauté, to a side with eggs at breakfast, or even many high end recipes; a true winner of Mediterranean cuisine.
It is better experienced fried or grilled.
