Our Beef Entrecôte (Rib Steak) from the Iberian Dehesa comes from native breeds of Iberian cattle, (some actually pre-Roman); free-range and grass-fed adult animals from the pastures in the north of the Iberian peninsula (from regions such as Galicia, Leon, Old Castille and the Basque Country), offering a singular combination of intense flavour, aroma and texture.
Amongst the breeds we source are; Rubia gallega, Betizu, Albera, Cachena, Leon, Terreña, Girona (et al).
The Dehesa is a protected pasture and forest Mediterranean savanna ecosystem hosting a wide variety of tree, plant and animal species including the Iberian lynx and wolf, the royal eagle, the Iberian fighting bull and the Iberian black pig.
The strong cherry colour of flesh combined with streaks of fat with yellowish hue, are behind its intense aromatic taste, also characterised by flavour persistence in palate and fibrous texture.
Our Iberian beef is obtained from animals more than 8 years old, with higher fat infiltration and superb organoleptic attributes. Such features, combined with proper maturation, yield beef showing the combination of tenderness and flavour worthy of the most demanding chefs.
